MEET HEIDI

Heidi Gaha is the creative force behind Generation X Baking Company—the one with flour or chocolate on her clothes, music in her head, and absolutely zero interest in making boring desserts.

Born in 1971 and raised on a steady diet of New Wave, Saturday morning cartoons, and pure Gen X independence, Heidi grew up believing that life should always have a killer soundtrack. To this day, music fuels everything she does—from recipe development to late-night baking sessions. If the kitchen’s lights are on, chances are something synth-heavy is playing while butter and sugar are becoming something magical.

In a former life, Heidi trained as a classical pastry chef, which means she knows the rules of baking very well… and occasionally enjoys breaking them. Her approach blends technique with bold flavors, nostalgia, and just enough rebellion to keep things interesting.

She’s also unapologetically obsessed with The Rocky Horror Picture Show, firmly believes Saturday morning cartoons were a sacred childhood ritual, and treats baking as her ultimate love language. For Heidi, dessert isn’t just food—it’s comfort, nostalgia, creativity, and a little bit of attitude all rolled into one.

Around here, she’s the one dreaming up the flavors, perfecting the textures, and making sure every bake earns its place on the stage.

MEET ANTHONY

Anthony Gaha is the behind-the-scenes powerhouse of Generation X Baking Company—part logistics wizard, part classic-car enthusiast, and full-time groupie extraordinaire.

Born in 1968 and originally from Sydney, Australia, Anthony made his way to the U.S. but never left his Generation X roots behind. His aesthetic can best be described as neon lights, jelly bracelets, and a killer synth track from Pet Shop Boys playing somewhere in the background. If it feels like it belongs in an arcade, on a mixtape, or cruising down the highway in a vintage ride, he’s probably a fan.

A twin by birth and a gearhead at heart, Anthony has a deep appreciation for classic cars, good music, and the kind of nostalgia that defined the 80s. At Generation X Baking Company, he’s the guy making sure everything actually works—handling the details, the planning, and the million little things that keep the bakery rolling.

He might not always be front and center, but every great show needs someone running the stage. Around here, Anthony makes sure the lights stay on, the wheels keep turning, and the bakery hits every note.
